our Andes Mtn.

For the first day of school those of us who stay how took a vote on if we should make cookies or cake for Middlest.  They picked chocolate cake. This recipe i made was so flipping yummy and perfect for a busy momma!!

Ingredients:
 1 Devils food cake mix
 eggs ( according to box)
oil (according to box)
water (according to box)
1/2 a bag of ANDES chocolate chips
Topping:
2 16oz of Whipped cream ( i found this to be to much but 1 was not quite enough so..) THAWED
1 piping bag
1 size 12 tip with coupling and ring



Make the cake following the directions on package.. add in those yummy ANDES mint chocolate chips.  ( I only used 1/2 a bag and the cake was not overhelming andes tasting but just perfect for ME add a full bag if you want) stir to combine.
Pour the mix into a  greased baking pan I used a 9x 11 ( i think) anyways you need to to have room on top to frost the cake after baking.
(these would also make AWESOME cupcakes)
bake until a toothpick comes out clean.
Remove from oven and allow to cool.

Make sure your whipped cream is thawed
Once the cake has cooled assemble your piping bag with the tip and fill the bag with whipped cream.
insert the tip into the cake and squeeze the whipped cream into the cake. DO NOT OVER SQUEEZE you will bust the cake!! Squeese the whipped cream into the cake in lots of diffrent places make sure well space your holes. but you still want every piece to get at least a little.
Once you have finished put the cake in the freezer for about 10 to 15 min.
The frost the top with however much whipped cream you want.
I then used a clean spatula and smacked the top of the cake so that it would look like mtn. peaks.
Put cake in the fridge until time to eat. :)
